Spanglish BLT

Chris and I watched Spanglish and tried their BLT recipe. It’s really good. So I’m going to post it here for those of you who haven’t seen it. (It’s in the DVD as one of their special features.)

What you need to make one BLT:

  • enough tomato slices to cover the bread
  • two slices of really nice crusty multi-grain bread — toasted
  • four strips (or maybe more or less — depending on how big your bread is) of bacon — cooked until crispy and drained of excess grease
  • mayonnaise
  • one egg — cooked over easy or runny — make sure that the yolk isn’t cooked all the way through
  • one or two lettuce leaves
  • 2 slices of Jack Monterey cheese

So how do you make it? Easy!

  1. Put the cheese on one slice of the bread and heat until melted. (use your toaster oven or broiler)
  2. Spread mayonnaise in the other slice of the bread and put the bacon, tomato and lettuce on top in that order. (I didn’t put any mayo on my sandwich since I hate it.)
  3. Put the egg on the top of the lettuce. Top with the slice of the bread with the melted cheese. Cut the sandwich in half, making sure to slice through the yolk so that it runs down in the middle.
  4. Enjoy.

Easy Orange and Ginger Chicken

I used chick thighs for this recipe, but chicken breasts work just fine. FYI — I own a George Foreman grill, and that’s what I use to cook chicken.

  • 6 chicken legs (that’s thigh and drumstick for you) — skinless and cut so that you end up with thighs and drumsticks separately. Stab each piece with a fork about 4-6 times (this is especially good if you’re stressed or pissed off about something :razz: )
  • a big chunk of fresh ginger — about the size of a man’s thumb — crushed or minced
  • a clove of garlic — crushed or minced
  • 1/2 cup of orange juice
  • a sprig of fresh lemon thyme (I think regular thyme’s also OK, and if you don’t have anything fresh, use dried thyme. BTW - use only the leaves!)
  • fresh ground pepper
  • some salt — I used about 1.5 tsp

Mix everything, except chicken, in a bowl. Then pour the mixture over chicken legs and marinate in the fridge for 1-2 hours. Cook until done.
